(I have no ldap experience, but some about mail servers)
Q:
- is [ldap, Dovecot, Postfix] full configured to working together?
- Or i need change anythings in config files for "multi domain" seting up?
- why use ldap to add email accounts?

Dovecot, ldap, postfix are already configured with sasl authentication.
Configuration is more than an example how ldap works, but it works if you want to use it.
I don't know what your config will be, so it depends from your configuration if ldap it's the best solution for you.
You can alternative use mysql or hash databases.

i dos not understand the relation beetwen dovecot, ldap and schemas & hierarchies. howto put email account into ldap records? What level & what schemas & What fields to fill out? (like adresse@domain.org)

Dovecot and postfix are using SASL authentication.
If you type 'testsaslauthd -u administrator -p toor' you will get
Code:
root@sms:~# testsaslauthd -u administrator -p toor
0: OK "Success."

You might also want to look at
/etc/postfix/main.cf
/etc/postfix/ldap-aliases.cf
/etc/postfix/ldap-mailists.cf
/etc/postfix/ldap-users.cf
/etc/dovecot-ldap.conf
/etc/dovecot.conf
/etc/saslauthd.conf
to see how they are configured.
